A quick, flavorful Italian shrimp pasta dish made with tender shrimp, fresh tomatoes, garlic, and a white wine sauce, all served over your favorite pasta.
1 lb shrimp (peeled and deveined)
8 oz spaghetti or pasta of choice
1 cup cherry tomatoes, halved
4 garlic cloves, minced
¼ cup white wine or chicken broth
2 tbsp olive oil
1 tbsp butter
1 tsp Italian seasoning
¼ tsp red pepper flakes
Juice and zest of 1 lemon
Fresh basil, chopped
½ cup grated parmesan cheese (optional)
Salt and pepper to taste
Cook pasta according to package directions. Reserve 1 cup of pasta water.
In a skillet, heat olive oil and butter. Add shrimp and cook until pink, then remove and set aside.
In the same skillet, sauté garlic, then deglaze with wine. Add tomatoes and cook until softened.
Add Italian seasoning, red pepper flakes, lemon juice, and pasta water. Stir in shrimp and pasta.
Garnish with fresh basil and parmesan, then serve.
For a richer sauce, add a splash of heavy cream. For a non-alcoholic version, substitute chicken broth.
