4 salmon fillets (6 oz each, skin-on or skinless)
3 tbsp pure maple syrup
2 tbsp Dijon mustard
1 tbsp soy sauce
1 clove garlic, minced
1 tsp olive oil (optional)
Salt and black pepper, to taste
Lemon wedges, for serving
Preheat oven to 400°F (200°C). Line a baking sheet with parchment or lightly oil.

Pat salmon fillets dry. Place on the baking sheet and season with salt and pepper.
Brush or spoon the glaze evenly over each fillet.
Let sit for 10–15 minutes at room temperature.
Bake for 12–15 minutes, until salmon is flaky and cooked through.
Optional: Broil for 1–2 minutes at the end for extra caramelization.
Squeeze lemon juice over the top before serving.
For gluten-free, substitute soy sauce with tamari.
Try adding a pinch of red pepper flakes for heat.
Pairs well with quinoa, roasted vegetables, or a citrus salad.
