Juicy chicken breasts grilled with a Mediterranean herb crust of oregano, rosemary, garlic, and lemon, perfect for a light yet flavorful dinner.

Ingredients

  • 4 boneless, skinless chicken breasts

  • ¼ cup olive oil

  • 2 tbsp lemon juice

  • Zest of 1 lemon

  • 2 cloves garlic (minced)

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • ¼ tsp red pepper flakes (optional)

  • Salt and pepper to taste

  • Fresh parsley for garnish

  • Lemon wedges for serving

Instructions

  • Combine olive oil, lemon juice, lemon zest, garlic, oregano, thyme, rosemary, red pepper flakes, salt, and pepper in a bowl.

  • Marinate the chicken breasts in the mixture for at least 30 minutes (up to 2 hours).

  • Preheat the grill to medium-high heat.

  • Grill the chicken for 6-7 minutes on each side, until fully cooked.

  • Garnish with fresh parsley and serve with lemon wedges.

Notes

Add a side of tzatziki sauce for dipping. Serve with roasted vegetables or quinoa.
